Our flagship Hatters Hill Pinot Noir is a rich and complex example of how the Delta vineyard’s clay soils influence the development of the Pinot Noir grapes. Infused with vibrant red fruit notes, beautifully balanced by warm spices and a rich, savoury finish.
Our best clone 115 Pinot Noir grapes were selected for this blend. Fermented at temperatures of up to 34 degrees, and hand plunged throughout the fermentation process, the wine was then aged in French oak barriques for seven months, 16 percent of which were new oak.
Drinking beautifully now, but with the stature and complexity to age for another ten years and beyond, this wine is an excellent accompaniment to seared beef tenderloin, or our favourite peppered Havarti cheese and plum jelly.

A fine layer of vanilla and baking spice adds complexity and depth. A lighter weighted wine on the palate with persistent flavours and a dry finish. Best drinking from day of purchase through 2028.
