Our flagship Hatters Hill Cabernet Merlot is a rich and complex example of how the Delta vineyard’s clay soils influence the development of the Cabernet Merlot grapes. A rich ands concentrated palate displaying flavours of blackcurrant, cedar and spice. Full bodied in style with toasted oak characters and a long complex finish.
Our Hatters Hill Cabernet Merlot was harvested from a single vineyard within the Gimblett Gravels wine growing district of Hawke's Bay. The vigour moderating, free draining gravel provides a superb base for growing Cabernet Sauvignon and Merlot. This vineyard site has ideal ripening conditions for achieving the structure and full aromatic profiles of these varieties.
Drinking beautifully now, but with the stature and complexity to age for another 5years and beyond, this wine is an excellent accompaniment to smoky flame grilled steak with garlic butter and roast beetroot salad.
