Palate: Strawberry shortcake with a rich round mid palate and dry finish.

Viticulture & Winemaking: Pinot Noir grapes from the Upper Wairau Valley grown on stony, sandy soils were selected. The grapes were destemmed and left to soak for a few hours to extract colour from the skins. The grapes were then lightly pressed and fermented in stainless steel at a cool temperature to enhance the aromatics.
Analysis: 12%, PH 3.61, Acidity 5.1g/L, Residual Sugar 1.7g/L
