Description: Our Hatters Hill Pinot Noir is a rich and complex example of how the Delta vineyard’s clay soils influence the development of the Pinot Noir grapes. Rich dark fruits, balanced with smooth earthy notes are effortlessly combine to form a rich, well rounded Pinot Noir.

Winemaker: Heather Stewart
Aroma: Black Kalamata olive, dark berry and liquorice.
Palate: Rich, round and full with damson plum, morello cherry and dried wild thyme characteristics. Smooth, toasty oak on the finish.
Drinking Potential: Drinking now or with careful cellaring will mature into a deeper, more complex wine that can be enjoyed during the next five years and beyond.
Viticulture & Winemaking: Clones 115 from our Delta vineyard were selected and cold-soaked for four day to stabilise the colour. 12% hand picked whole bunches were added to the ferment to add tannin complexity, and the must was hand plunged up to four times a day at peak fermentation. The wine was then delicately aged in French oak barriques for 10 months, during which, malolactic fermentation took place. Only the best barrels in the batch were selected by our winemaker.
