2015 Hatter's Hill Sauvignon Blanc

The 2015 Hatters Hill Sauvignon Blanc is a wine of great concentration, with vibrant aromas of papaya, grapefruit and blackcurrant. The silky palate has a herbal thread and salty minerality with an intense lingering finish.


The fruit is sourced from a single vineyard located on the fertile, free draining soils of Marlborough's sub region of Dillons Point. The coastal location and the cooler climate creates a longer growing season, providing a greater intensity of flavour to the wine and a hint of salt to the palate.


From flowering through to ripening the 2015 growing season was warmer than usual, although the cooler evenings allowed the unique flavour development typical of Marlborough Sauvignon Blanc.

The fruit was carefully monitored during ripening and machine harvested in the cool of the evening at maximum flavour maturity and physiological ripeness. The grapes were transported promptly to the winery where they were immediately pressed to minimise skin contact.

After settling, the racked juice was inoculated with yeast and fermented at 12 degrees celsius for three weeks to retain fruit flavour and freshness.

Tasting Note

This wine is drinking beautifully now and will be best enjoyed over the next two to three years. An ideal match with pan-fried scallops, fresh asparagus or Marlborough mussels.

Colour: Very light straw.
Nose: Concentrated aromas of grapefruit, blackcurrant and papya with a hint of salt.
Palate: Rich in tropical fruit flavour with a herbal thread and salty minerality. The palate has a silky texture and great length.
